Ingredients

  • 1 Bunch Cilantro Leaves
  • ¼ cup plus 1 Tbsp Key Lime Infused Olive Oil
  • ¼ cup plus 1 Tbsp Mojito White Barrel Aged Balsamic
  • 4 Large Cloves Garlic
  • 1 Tbsp Mojo Citrus Seasoning Salt, plus more for seasoning
  • 3 Oranges, zested and juiced
  • 2–3 lb Pork Shoulder
  • 1–2 cups Chicken Stock, if needed

Directions

  1. In a blender, combine cilantro, ¼ cup Key Lime Olive Oil, ¼ cup Mojito Balsamic, garlic, 1 Tbsp Mojo Citrus Seasoning Salt, orange zest, and juice. Blend until cilantro is finely chopped.
  2. Place pork shoulder in a zip-top bag and pour the marinade over it. Seal and refrigerate overnight, or for at least 1 hour.
  3. Preheat oven to 450°F. Place pork and marinade into a Dutch oven. Add chicken stock if necessary, until pork is halfway submerged.
  4. Roast uncovered for 15 minutes. Then lower oven temperature to 350°F, cover the pot, and continue cooking for about 3 hours, turning the pork every 30 minutes, until the meat is tender and fully cooked.
  5. Let pork rest for 15 minutes. Shred and toss with 1 Tbsp Key Lime Olive Oil and 1 Tbsp Mojito Balsamic. Season with additional Mojo Citrus Seasoning Salt to taste. Serve and enjoy!
