Sun-Dried Tomato, Sausage & Kale Pasta

- 1 lb Pappardelle Italian Pasta
- 1 Pasta Rock™
- 1 Tbsp Pizzaolio Infused Olive Oil
- 1 lb Italian Ground Sausage
- 1 Small Shallot, diced
- 1 Head Kale, chopped
- 8 oz Jar Sun-Dried Tomatoes, drained
- 2 Tbsp Bruschetta Dried Herb Blend
- 3 Tbsp Sun-Dried Tomato Barrel Aged Balsamic
- 1 Lemon, zest and juice
- 1 cup Freshly Grated Parmesan, plus more for garnishing
- Chopped Parsley, for garnishing
Directions
- Bring a large pot of water to a boil. Salt the water using a Pasta Rock™ according to package instructions.
- Cook the pappardelle pasta per package directions. Reserve 1 cup pasta water, then drain and set aside.
- While pasta cooks, heat olive oil in a pan over medium heat. Add sausage and cook until browned, about 5 minutes.
- Add shallot, kale, sun-dried tomatoes, herb blend, and balsamic. Cook until kale is wilted, about 3 minutes.
- Add pasta, ½ cup reserved pasta water, lemon zest and juice, and Parmesan. Stir to combine, adding more water if needed to loosen sauce.
- Serve garnished with extra Parmesan and chopped parsley. Enjoy!
