
Garlic Sesame Soba Noodle Salad
This refreshing and flavorful soba noodle salad is tossed with a garlicky sesame-soy dressing and fresh crunchy vegetables. A perfect side or light lunch for warm days!

- 12 oz Soba Noodles
- ¼ cup Tamari or Soy Sauce
- 2 Tbsp Brown Sugar
- 2 Garlic Cloves, minced
- 2 Tbsp Ginger White Barrel Aged Balsamic
- ¼ cup Toasted Sesame Oil
- 1 Carrot, julienne cut or grated
- 1 Cucumber, julienne cut or grated
- 1 Green Onion, sliced thin
- Sesame Seeds, for garnish
Directions
- Cook the soba noodles according to package directions. Drain and set aside.
- In a medium bowl, whisk together tamari, brown sugar, garlic, and Ginger Balsamic. Slowly drizzle in the Toasted Sesame Oil while whisking to emulsify.
- Toss the cooked noodles with the carrot and cucumber, then pour the dressing over and mix until everything is well coated.
- Transfer to a serving plate and garnish with green onion slices and sesame seeds.
- Serve and enjoy!
