Dutch-Process, also called "alkalized unsweetened cocoa," is treated to neutralize its acids. It does not react with baking soda, so it must be used in recipes calling for baking powder, unless there are other acidic ingredients in sufficient quantities used. Its delicate flavor makes it ideal in light baked goods where its subtle flavor compliments other ingredients.
