POT ROAST BARBECUE
Sauce:
- 1 cup Bonnie's Country Classic BBQ Sauce or TexMex Style BBQ Sauce
- 3 tbsp flour
Roast:
- 1 (3 lb) beef chuck arm, blade, or 7 bone pot roast (about 2 inches thick)
- Chipotle rub (optional)
- 2 stalks celery, sliced
- 2 medium carrots, thinly sliced
- 1 medium onion, sliced
Instructions:
- Heat grill
- In a small bowl, combine all sauce and flour, blend well. Spoon 1/2 cup sauce on a 30x18 inch double thickness of heavy duty foil. Place meat over sauce; liberally season with Chipotle Rub (optional), top with celery, carrots, and onion. Pour remaining sauce over vegetables. Wrap securely with double-fold seal.
- When ready to grill, place packet on gas grill. Grill on medium heat (325 degrees) for 1 1/2 hours or until desired doneness. Can also be done in crockpot, the oven, or cooking bags
