
BBQ Pot Roast
Slow-grilled (or oven-baked) to tender perfection, this BBQ Pot Roast is wrapped in foil with hearty vegetables and smothered in Bonnie's Country Classic or TexMex BBQ Sauce. Whether you're using the grill, oven, or slow cooker, this recipe delivers bold flavor and melt-in-your-mouth comfort every time.
Ingredients
Sauce
- 1 cup Bonnie's Country Classic BBQ Sauce or TexMex Style BBQ Sauce
- 3 Tbsp flour
Roast
- 1 (3 lb.) beef chuck arm, blade, or 7 bone pot roast (about 2 inches thick)
- Chipotle Lime Rub (optional)
- 2 stalks celery, sliced
- 2 medium carrots, thinly sliced
- 1 medium onion, sliced
Directions
- Heat grill
- In a small bowl, combine all sauce and flour, blend well. Spoon 1/2 cup sauce on a 30x18 inch double thickness of heavy-duty foil. Place meat over sauce; liberally season with Chipotle Lime Rub (optional), top with celery, carrots, and onion. Pour remaining sauce over vegetables. Wrap securely with double-fold seal.
- When ready to grill, place packet on gas grill. Grill on medium heat (325 degrees) for 1 1/2 hours or until desired doneness. Can also be done in crockpot, the oven, or cooking bags
