
Thin Crust Pizza with Fresh Mozzarella, Chicken Sausage, Red Onion & Basil

Dough Ingredients
- 1-1/2 cups warm water - 110°F
- 1 packet of active dry yeast
- 1 teaspoon sugar
- 3-1/2 - 4 cups all-purpose flour
- 1 teaspoon Kosher salt
- 2 tablespoons olive oil (try our Pizzaolio Infused Olive Oil!)
Sauce Ingredients
- 1 can (14.5 oz) whole San Marzano tomatoes
- 1 clove garlic
- 1/2 teaspoon Kosher salt (try our Olivelle Roasted Garlic Sea Salt!)
- 1/2 teaspoon sugar
- 1/4 teaspoon balsamic vinegar (try our Olivelle Roasted Garlic White Balsamic Vinegar or our Spicy Sriracha Barrel Aged White Balsamic Vinegar for a kick!)
Topping Ingredients
- Shredded Parmesan cheese
- Fresh mozzarella, sliced
- Spicy Italian chicken sausage, sliced
- Red onion, thinly sliced
Directions
- Measure and heat the water to 110°F. Add it to a stand mixer bowl and stir in sugar. Sprinkle yeast on top and let it sit until foamy.
- While yeast activates, measure olive oil, salt, and flour.
- Add olive oil and salt to the yeast mixture. Mix in 1 cup of flour on low for 2 minutes, then gradually add 3 more cups of flour until a dough ball forms. Knead briefly on a floured surface and form into a ball.
- Place dough ball in an oiled bowl, cover with a towel, and let it rise for about 30 minutes.
- Divide risen dough into three equal pieces. Knead each one lightly, adding flour as needed, until smooth. Dust with flour, place on a plate, cover with plastic wrap, and refrigerate overnight.
- Remove dough from fridge two hours before baking to let it come to room temperature.
- Place a pizza stone or steel on the middle rack and preheat the oven to 475-500°F.
- To make the sauce, blend all sauce ingredients until smooth using a blender or immersion blender.
- Prepare toppings by slicing mozzarella, chicken sausage, and red onions. Chop fresh basil for garnish.
- To assemble, take one dough ball and stretch into an 8”-12” round disc. Place it on parchment over a pizza peel.
- Spread a thin layer of sauce, followed by shredded parmesan, mozzarella slices, sausage, and red onions. Do not overload.
- Transfer pizza to oven with the peel and bake until the cheese is melted and crust is golden.
- Remove from oven, let cool slightly, garnish with basil, and serve.
