  1. Preheat the oven to 350°F.
  2. In a sauté pan over medium‑high heat, add the bacon and cook until browned.
  3. Add the wild mushroom & sage infused olive oil, onion, celery, and mushrooms; cook until softened (~6‑7 minutes).
  4. Turn off the heat and add the bread cubes, carefully folding to combine.
  5. Season with the butcher’s spice blend and Mediterranean rosemary rub & seasoning, then add the mixture to an 8×8 inch baking dish.
  6. In a separate bowl, whisk the eggs with the chicken stock and pour over the bread mixture.
  7. Cover and bake for 45 minutes, or until golden. Enjoy!
