Savory Bacon and Mushroom Stuffing

Ingredients
- 5 slices of bacon
- 2 Tbsp wild mushroom & sage infused olive oil
- 1 yellow onion, diced
- 4 stalks celery, diced
- 3 cups mushrooms, diced
- 1 baguette (day‑old) torn into 1″ cubes
- 1 Tbsp butcher’s spice blend, freshly ground
- 1 Tbsp Mediterranean rosemary rub & seasoning
- 3 eggs
- 2 cups chicken stock
Directions
- Preheat the oven to 350°F.
- In a sauté pan over medium‑high heat, add the bacon and cook until browned.
- Add the wild mushroom & sage infused olive oil, onion, celery, and mushrooms; cook until softened (~6‑7 minutes).
- Turn off the heat and add the bread cubes, carefully folding to combine.
- Season with the butcher’s spice blend and Mediterranean rosemary rub & seasoning, then add the mixture to an 8×8 inch baking dish.
- In a separate bowl, whisk the eggs with the chicken stock and pour over the bread mixture.
- Cover and bake for 45 minutes, or until golden. Enjoy!
