Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1 1/4 cups granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure almond extract
  • 1 teaspoon freshly squeezed orange juice
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cardamom
  • 1 tablespoon orange zest (about 1 medium orange)
  • 4 oz dark chocolate chunks, finely chopped
  • 16 oz dark chocolate chunks, for melting
  • Coarse sugar for rolling (e.g., sugar in the raw)
  • Flake sea salt (Try our Olivelle Vanilla Bean Sea Salt!)
  • Additional orange zest for sprinkling

Directions

  1. In a stand mixer with paddle attachment, beat butter on medium until smooth. Add sugars and beat until light and fluffy. Add egg and almond extract; beat on high for about 5 minutes, scraping down as needed. Mix in orange juice for another minute.
  2. In a separate bowl, sift flour and mix in salt and cardamom. Gradually add to wet mixture 1/2 cup at a time, mixing on low until incorporated. Fold in orange zest and 4 oz chopped chocolate.
  3. Divide dough in half. On a floured surface, roll each into a 2 1/2-inch diameter log and wrap in plastic. Chill completely for at least 2 hours or up to 1 week.
  4. Preheat oven to 350°F. Roll logs in coarse sugar. Slice into 1/2-inch rounds. Place 2 inches apart on a cookie sheet and bake for 12 minutes, or until edges begin to brown. Cool on sheet 2 minutes, then transfer to a rack.
  5. Melt 16 oz chocolate in a double boiler or microwave. Dip each cooled cookie halfway and place on parchment or silicone-lined sheet. While chocolate is warm, sprinkle with flake salt and orange zest. Refrigerate 30 minutes to set.
