Ground Ceylon Cinnamon

"True" Ceylon cinnamon is native to Sri Lanka and is often confused with cassia, which is what we in the U.S. think of as cinnamon. Ceylon cinnamon is sweeter and lighter than cassia. Its flavor is sometimes described as having a hint of citrus. Ceylon cinnamon is an excellent choice for baking with its lighter flavor. Our Ceylon cinnamon has an oil content of just over 2%, so it won't interfere with the rising of your dough.
