
Everyday Salad with Lemon Poppyseed Dressing

Chicken
- 2 chicken breasts
- 3 Tbsp Sicilian Lemon Infused Olive Oil
- 2 Tbsp Barrel Aged White Thick Sweet Balsamic
- 1 Tbsp Butcher’s Spice Blend
Dressing
- 1 cup Greek yogurt
- ⅓ cup mayo
- 1 ½ Tbsp sugar
- 2 Tbsp Barrel Aged White Thick Sweet Balsamic
- 1 Tbsp Sicilian Lemon Infused Olive Oil
- ½ tsp Butcher’s Spice Blend
- 1 lemon, zested and juiced
- 2 Tbsp poppy seeds
Salad
- 4 cups mixed salad greens
- ½ cucumber, halved and sliced
- 1 cup strawberries, sliced
- ½ cup feta, crumbled
- ⅓ cup pistachios, chopped
Directions
- Cube the chicken into ¾-inch pieces. In a bowl, combine marinade ingredients. Add chicken and marinate for at least 30 minutes, up to 6 hours.
- In a bowl or mason jar, mix all dressing ingredients until well combined. Refrigerate until ready to use.
- Remove chicken from marinade. Cook in a sauté pan over medium-high heat until cooked through, about 8 minutes.
- Assemble the salad by layering greens with cucumber, strawberries, feta, and pistachios. Top with warm chicken and drizzle with dressing.
