
Creamy Chipotle Roasted Cauliflower

- 1 large head cauliflower, cut into florets
- 2 Tbsp cornstarch
- 2 tsp Chili Verde Flake Sea Salt
- ¼ cup Green Chile Infused Olive Oil
- ¼ cup mayo
- 2 tsp Chipotle Lime Rub & Seasoning
- 3 Tbsp Pineapple Habanero White Barrel Aged Balsamic
- 2 green onions, sliced
- ½ cup cashews, chopped
- 1 habanero, sliced thin
Directions
- Preheat oven to 425°F.
- In a large bowl, toss cauliflower florets with cornstarch, Green Chile Infused Olive Oil, and Chili Verde Flake Sea Salt.
- Spread cauliflower on a baking sheet in a single layer, ensuring it is not overcrowded. Roast for 20 minutes.
- While the cauliflower roasts, mix mayo, Chipotle Lime Rub, and Pineapple Habanero Balsamic to create the aioli.
- Once roasted, toss the hot cauliflower with the aioli and transfer to a serving dish.
- Top with sliced green onions, chopped cashews, and thin slices of habanero. Serve immediately.
