Directions

  1. Rub 2–3 teaspoons of MeatMan’s Charged Hickory Rub per pound thoroughly into the meat.

  2. Cover and refrigerate for 3 to 24 hours to allow the flavors to develop.

  3. Preheat oven to 275°F.

  4. Wrap the roast tightly in foil and place in a roasting pan.

  5. Cook in the foil for 2½ to 3 hours.

  6. Remove the foil and finish on a medium-heat grill for 30–45 minutes for a smoky crust.
    Alternatively: Finish uncovered in a 350°F oven instead of grilling.

  7. Let rest before slicing and serving.
