Not Your Traditional Pot Roast

1 boneless beef chuck, arm, shoulder or blade pot roast (4 lb)
1 teaspoon pepper
1 cup MeatMan’s Beef Marinade
½ cup Coke
8 small potatoes, cut in half
8 medium carrots, peeled and cut into quarters
8 small whole onions, peeled

 

  1. In 4-quart Dutch oven, cook beef over medium heat until brown on all sides; reduce heat to low.
  2. Sprinkle beef with pepper. Add Coke and MeatMan’s Marinade to Dutch Oven.  Heat to boiling; reduce heat. Cover; simmer 2 hours 30 minutes OR roast in oven 300 degrees for 2 hours.
  3. Add potatoes, carrots, and onions.  Cover and continue cooking until vegetables are tender.
