We know some days there are just not enough hours in a day! Quickly have dinner ready with this Freezer Bag Chicken Fajita meal! Make ahead, keep in the freezer, and fry it up when you're ready to eat!

  • 1/4 cup Frantoia Italian Extra Virgin Olive Oil
  • 2 tbsp Cooks Fajita Seasoning
  • Salt and pepper, to taste
  • 2 cloves garlic, finely chopped
  • 1 red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 small red onion, thinly sliced
  • 1–1.5 lbs. boneless, skinless chicken breast, cut into 1/2-inch pieces
  • 12 small tortillas
  • Guacamole, sour cream, salsa, or other toppings of choice
  • Optional kitchen tool: bag holder for easy meal prep

Directions

  1. Add chopped vegetables and chicken to a freezer bag (a hands-free bag holder can help).
  2. Add olive oil, fajita seasoning, salt, and pepper to the bag.
  3. Squeeze out most of the air and seal the bag. Gently toss to coat all ingredients. Freeze until ready to use.
  4. When ready to cook, pour the contents into a skillet and cook over medium-high heat, stirring frequently, until chicken is cooked through (about 12 minutes).
  5. Serve with tortillas and your favorite toppings. Enjoy!

Recipe Note

TIP: Thaw meals in the refrigerator 24 hours before cooking for best results.
